Food Fanatic Chef Rocco Spices It Up With Buncombe County Schools’ Staff

Featured on the agenda was culinary training that School Nutrition Director Lisa Payne arranged with distributor partner US Foods.

Ms. Payne, and her staff have been working with the vendor broker community all year to enhance the meals that are being served in our school cafeterias.

US Foods Food Fanatic Chef Rocco, Chef Albert, Doug Brown, US Foods Territory Manager and Shaun Shockly, US Foods District Sales Manager worked with the School Nutrition Management team sharing the addition of salt free, gluten free seasonings and spices to enhance vegetables and dressings. Lessons were given in rehydrating dried herbs, using mire pox as a seasoning. Excellent food was served with no added sodium or fat.

Chef Rocco offered the school nutrition staff hands on training opportunities in an instructional setting. School Nutrition Director Lisa Payne was very excited about this professional development opportunity for her staff. “It was very exciting to watch my staff absorb information and appreciate the training that he provided. Each of our Manager’s are passionate about the students they serve daily. The results of today’s training will be seen soon, as we begin using herbs and spices to enhance our menu items.”
